Gluten-Free Pumpkin Recipes

It’s that time of year! When it seems like all our food has been turned into a new limited edition pumpkin flavor! We only have pumpkins around one month out of the year so you might as well get your fill of it now because come next August you’ll be begging for a taste of limited edition pumpkin anything!

Pumpkin Corn Pasta Pesto

Say that three times fast! I picked up most of my ingredients from Trader Joe’s.

TJ’s – Corn Pasta (Penne), Parmesan Cheese
TJ’s – Fresh Basil Plant
TJ’s – Pumpkin (Cheapest Around)
TJ’s – Garlic, Fresh Parsley, Lemons, Tomatoes
TJ’s – Can of pumpkin

You will also need olive oil.

Grab your sturdy cockpot and turn it on high for 3 hours or low for 6 hours. Add HALF of the bag of corn penne pasta, keep the other half for another meal. Chop up four tomatoes, measure out 1/3 cup pumpkin, and a clove of crushed garlic and blend for a about 15 seconds. Add 1 tablespoon of olive oil and a few tablespoons on parmesan. Blend for another 15 seconds and then pour on top of the pasta. If this mixture does not cover the pasta add a bit of water for easy noodle cooking. Add some basil and parsley for the slow cook – unblended.

While the above is cooking, roast some of the pumpkin seads and salt with coarse sea salt and sprinkle with parmesan. These will be your amazing toppers!

You can whip up some of the pesto sauce to add to the dish once it is out. The consistency is completely up to you, make it as you would like it. Start with one tablespoon of olive oil, if you add to much of something add a little more olive oil. Worst case you’ll have more than you need of an amazing pesto loaded with awesome olive oil power!

Pesto Mix Mix – Olive oil, Basil and Parsley (several pinches), Lemon Zest, Lemon Juice, Garlic AND Blend!

Once your pasta is ready, dish out, add your pesto sauce and top with your amazing pumpkin seeds!

Pumpkin Chili

The secret to a great bbq is the mix of meaty and sweet. This is why this recipe will blow everyone away at the next Charger game…insert bad Charger joke here.

Again, grab ole faithful (your crockpot silly) and head on over to Trader Joe’s to get the ingredients.

TJ’s – Kidney Beans
TJ’s – Onions, Tomato Juice
TJ’s – Pumpkin Spice, Can of Pumpkin
TJ’s – Raw Sugar
TJ’s – 2 lbs. Organic Ground Meat (4-6 people)

YOU MUST COOK THE MEAT FULLY BEFORE ADDING TO CROCKPOT! Food bourne illnesses are serious. Please cook thoroughly!

You will want to have meat fully cooked and in crockpot with all ingredients for at least four hours.

Once you have cooked your meat add kidney beans, chopped onions, tomato juice (at your desired thickness), chopped bell peppers, 1 tablespoon chili powder, 1/2 can pumpkin and 2 table spoons of pumkpkin spice, 1/4 cup of raw organic sugar.

Mix well, Cover and go relax!

Fun Idea Topping Bar – For those that like the fixings have some diced green onions, shredded cheese, sour cream, bacon bits (that you make in the oven yourself) and the newest chili topper guacamole!
