Crazy for Cucumbers

1 large cucumber
1‐2 Tablespoons rice wine vinegar
1‐2 Tablespoons soy sauce
2‐3 teaspoons sesame seed oil
1 Tablespoon diced green onion (can also use white or yellow onion, small dice.)
Toasted sesame seeds
1. Peel the cucumber to make lines or peel the entire thing.
2. Cut into ½” thick slices then quarter the slices.
3. In a small bowl, whisk together all the liquids. Add additional measurements of each, to taste.
4. Toss cucumbers, green onions, & sesame seeds with mixture.
Let sit for about five minutes before serving.
